Main modules

Each of the 13 modules follows a theme, which should be of interest to the lives of the young people you teach. By progressing through the modules, the young people will develop essential cooking skills and learn basic techniques. In addition, they will learn about:

  • Healthier eating;
  • Budgeting;
  • Food Safety and hygiene;
  • Using basic recipes to create other dishes.

Within each module 3 recipes are prepared. Depending on the time you have available, you may wish to split the modules or simply concentrate on 1 recipe. The choice is yours.

 Each module follows a generic structure:

  • Aims and objectives i.e. the relevant teaching and learning points;
  • Setting the scene;
  • Recipe overview;
  • Shopping list;
  • Plan of action;
  • Food skills and techniques covered;
  • Specific background information on healthier eating and drinking, food safety and hygiene, budgeting and recipe adaptation for use throughout (or after) the coooking session.

Each module offers an overview, setting the scene and providing top tips about the cooking experience. The idea of the course is to impart skills and knowledge of cooking, ingredients and safety while the young people are preparing and cooking.

The modules are based on 10 young people working in pairs. Feel free to change the working arrangements to best suit your own circumstances.

The modules are:

Module 1 - Getting to grips
Tortilla toastie , Tomato and bean soup and Fruit jelly

Module 2 - Indian Express
Lamb (quorn) rogan josh, Raita and Naan bread

Module 3 - Lunchbox fun
Hummus, pepper and grated carrot pockets, Veggie samosas and Yogurt, honey, nuts and dried fruit

Module 4 - Noodle time
Chicken (tofu) stir-fry, Noodles and Fruit smoothie

Module 5 - Mama mia!
Basic tomato sauce and pasta, Garlic bread and Layered salad

Module 6 - Take out? Cook in!
Parmesan chicken nuggets, Potato wedges and Fruit punch

Module 7 - Back to basics
Quiche (bacon, salmon or veggie), Vegetable couscous salad and Fruit salad

Module 8- Simple, but fun
Cauliflower cheese, Bubble and squeak and Berry (apricot) flapjacks

Module 9 - Wakey, wakey
Healthier fry-up, Porridge, Fruit pancakes

Module 10 - A fishy tale
Fish pie (spinach, cashew nut), Mixed vegetables and Baked bananas

11 - bbq frenzy
Tandoori chicken, haulomi kebabs and burgers 

Module 12 - Veg out!
Butternut squash risotto,  ratatouille and red lentil bake

Module 13 - Impress
Salmon fish fingers, roasted vegetables and herby mash
